The Chardonnay component contributes to the richness and backbone to the wine, while the Pinbot Noir adds fruit and elegence with its characteristic hints of ripe red berries and a touch of spice. The wine with its pale red copper tinge is a unique combination in every aspect and a wine made with care and commitment, the gentle oak maturation giving it the potential to age well if not enjoyed right now. An excellent complement to poulty, cream-based dishes, veal or salmon.

A blend on 60% Chardonnay and 40% Pinot Noir from two specific vineyards.
Cool nights during the ripening period ensured finesse. The grapes were harveted into half-bins and osrted by hand before being crushed.
Vinification:
20% of the chardonnay was wood-fermented and left on the lees for eight weeks in the barrel. The Pinot Noir component was picked at full ripeness and whole-bunch pressed to ensure minimum colour extraction. Using only the free-run juice, a cool-ferment was done in stainless steel tanks.

Anecdote
This prestigious winery dates back to 1685 and was owned by Jean Le Long, a French Huguenot. It was in 1715 that Abraham De Villiers purchased the winery and rented it to Nicolas de Lanoy. Together, these families possess an experience in wine making that we can still appreciate today.
