Dark purple in the glass. Smoky notes with intense dark fruit aromas, framed by oak spice. Fleshy dark fruit continue on the palate with firm tannins and lingering flavours of spice and dark coffee. Full- bodied with well balanced fruit acidity and integrated tannins.

Description :
The Pinotage was harvested from older bush vines in the Agter- Paarl and from trellised vineyards on the Fairview farm in Paarl. The bushvine vineyards are dry farmed and the vines grow on deep, Malmesbury Shale soils, whilst the trellised vines are drip irrigated.

Second and third week of February 2011
WINEMAKING
The grapes were picked over a number of days at average sugar levels of 25.5°B. The bunches were destalked and lightly crushed before fermentation in stainless steel tanks. After malolactic fermentation was completed, the wine spent ten months in used French and American oak barrels, before blending and bottling. 10% New oak was used.

Anecdote
Creativity, originality, quality….. Simon Van Der Stel, Governor of the Cape, purchased the farm in 1699 when the first wine was made. Charles Back, the Grandfather, emigrated from Lithuania, bought the farm from a French Huguenot in 1939. It was in 1974, Cyril, the Father started the « Goat Milk » business. Charles, the son, in 1978 built the « Tower », giving birth to the brand and names; FAIRVIEW, SPICE ROUTE, GOATS and newly, LA CAPRA meaning Goat in Italian http://www.fairview.co.za/
