Grapes are sourced mainly from the Paarl and Agter-Paarl areas, with a small portion of fruit from the Swartland region. The vineyards are all trellised and are mostly unirrigated.
Winemaking:
Grapes were hand picked and fermented on the skins in stainless steel tanks. The wine was pressed off the skins and transferred to 2nd to 4th fill French oak barrels and matured for 10 months before being bottled.

Anecdote
Creativity, originality, quality….. Simon Van Der Stel, Governor of the Cape, purchased the farm in 1699 when the first wine was made. Charles Back, the Grandfather, emigrated from Lithuania, bought the farm from a French Huguenot in 1939. It was in 1974, Cyril, the Father started the « Goat Milk » business. Charles, the son, in 1978 built the « Tower », giving birth to the brand and names; FAIRVIEW, SPICE ROUTE, GOATS and newly, LA CAPRA meaning Goat in Italian http://www.fairview.co.za/
